1 1/2 -2 lbs. chicken
2 cans great northern beans
1 T - 1/4 c. minced onions
garlic powder
2 t. ground cumin
1 can chicken broth
1 jar mild salsa
1 can Mexican flavored tomatoes
shredded mozzarella cheese to taste
Cover chicken with water and cook till tender; reserve broth from cooking; cut up chicken in small pieces and add all the other ingredients except cheese.
Put in more water if needed and simmer as long as you can.
Add cheese at the end.
This can all be varied by using hot salsa instead of mild to make it spicier.
Kids and adults like it like it is, and adults can always add jalapenos.
This can also be expanded using one more can of beans and a little more water.
This is a favorite of ours during football games along with tortilla chips.

When Daddy lost the Hat Co. and had no income, a Smythe relative gave him a job selling insurance. He worked long hours and would sometimes not call at suppertime because he was busy selling a policy.
